Gyudon is the Japanese comfort food classic — thinly sliced beef and onions simmered in a savory-sweet dashi sauce, served over steamed rice. Ready in 20 minutes with one pan. Use thinly shaved ribeye or chuck (find it at Japanese markets or use frozen shaved steak for cheesesteaks).
Instructions
Make the Sauce
In a large frying pan , combine 0.50 cup dashi , 2 tablespoons sake , 2 tablespoons mirin , 3 tablespoons soy sauce , and 1 tablespoon sugar . Stir to dissolve the sugar.
Simmer
Add onion to the pan. Spread evenly, then lay 0.50 lb thinly sliced beef ribeye on top of the onions.
Cover with a lid and cook over medium heat. Once simmering, reduce heat and cook covered for 4-5 minutes , skimming any scum from the surface.
Add 1 teaspoon grated fresh ginger and cook uncovered for 1 minute until the sauce reduces slightly.
Serve
Divide cooked Japanese short -grain rice{2%servings}(about 1 2/3 cup per bowl) into bowls. Ladle the beef, onions, and sauce over the rice.
Top with sliced scallions , pickled red ginger , and shichimi togarashi . Optional: add a poached egg or raw egg yolk per bowl.
