36 g Craft Coffee beans (5-7 tbsp) 600 ml water , plus additional for rinsing

Chemex 6-cup brewer Square Chemex filter Pouring kettle (gooseneck preferred) Drinking mug Burr grinder (recommended) Scale (recommended)

Before You Brew

For best results, we strongly recommend starting with whole bean coffee and grinding with a burr grinder immediately before brewing. If you grind your coffee too soon, it will quickly lose many of the compounds that give it such delightful aromas and flavors.

If using pre-ground coffee, look for a medium-coarse grind (similar to coarse sea salt). The water you use is very important — use filtered or spring water, never distilled.

The Brew

Unfold the square Chemex filter and place it in the Chemex 6-cup brewer with the triple-fold side facing the pouring spout.

Rinse the filter with hot 200 ml water . This removes papery taste and preheats the brewer. Discard the rinse water from the brewer, leaving the filter in place.

Add the 36 g Craft Coffee beans to the filter and give it a gentle shake to level the bed.

Start your timer and pour 72 ml water over the grounds, just enough to saturate them. This is the bloom. Let it sit for 45 seconds . You should see the coffee bubble and swell as it releases carbon dioxide.

After the bloom, slowly pour 528 ml water in a steady spiral, starting from the center and working outward, then back to center. Keep the water level below the top of the filter. Try to complete this pour by about 1 minute .

Allow the water to drain through the grounds. The total brew time from first pour to last drip should be about 3.5 minutes .

Once dripping slows to a halt, remove and discard the filter with the grounds. Pour from the Chemex into your drinking mug and enjoy.
