Choy sum (菜心) blanched until tender, then drizzled with a hot garlicky sauce that's savory and lightly sweet. A popular dim sum side dish that takes 15 minutes and just 5 ingredients. Based on a recipe from Omnivore's Cookbook by Maggie Zhu.

## Instructions

Soak 1 lb choy sum in cold water for a few minutes, then rinse thoroughly to remove dirt. Discard any withered or yellow leaves. Drain well.

Note For young short choy sum, just trim the ends. For longer mature stalks, cut into 3-inch pieces.

### Blanch

Bring a large pot of water to a boil over medium-high heat. Add a splash of oil and a pinch of salt to keep the choy sum bright green.

Add the choy sum stem side down so the thicker part cooks longer. Cook the stems for 30-60 seconds , then submerge the leafy part. Cook until just tender, 1-2 minutes total.

Drain immediately and rinse under cold water to stop the cooking. Pat dry and arrange on a serving plate.

### Make the Sauce

In a small bowl , mix 1⅓ tablespoons oyster sauce , 2 teaspoons light soy sauce , and ¼ teaspoon sugar .

Heat 2 tablespoons peanut oil in a small saucepan over medium heat. Add 4 cloves coarsely chopped garlic and stir for 30 seconds until fragrant.

Pour in the sauce mixture. Cook and stir for 30-60 seconds until slightly thickened.

### Serve

Immediately pour the hot sauce over the plated choy sum. Serve as a side dish.
