Dan Bing (蛋餅) is the classic Taiwanese breakfast, a slightly crispy, chewy green onion crepe with an egg layer. Wrap anything inside: ham, cheese, corn, basil, or even Chinese donuts (油條). This is a fail-proof family recipe that just takes a little practice to flip perfectly. Based on a recipe from Tiffy Cooks.

## Instructions

### Make the Batter

In a bowl , whisk 4 tablespoons flour , 2 tablespoons sweet potato flour , ½ cup water , 1 teaspoon salt , and 1 teaspoon white pepper until smooth and runny. Mix in 1 stalk chopped green onion .

### Cook the Crepe

Heat a non-stick pan over medium-high heat. Drizzle in a little neutral oil . Once hot, pour in half the batter and spread evenly. Let it cook for 2-3 minutes until set, then another 1 minute on the other side. Transfer to a plate.

Note Use a non-stick pan and be patient, lower heat and longer cook time makes flipping much easier for beginners.

### Add the Egg Layer

Wipe the pan and add a little more oil. Pour in egg and immediately place the cooked crepe on top of the wet egg. Let it sit for 30-60 seconds until the egg sticks to the crepe, then flip.

### Roll & Serve

Roll up the crepe and add any toppings of your choice. Repeat with the remaining batter and second egg.
