## Ingredients

- 2 tbsp extra virgin olive oil
- 3 tbsp red wine vinegar
- 0.50 tsp honey
- 0.50 tsp dijon mustard
- 0.25 tsp salt
- 12 oz cherry tomatoes
- 12 oz english cucumber
- 0.25 cup kalamata olives
- 0.50 red onion
- 0.50 cup extra virgin olive oil
- \- kosher salt
- 1 pinch dried oregano
- 4 oz feta cheese

## About

A classic Greek salad with a tangy honey dijon vinaigrette. Great for meal prep, store dressing separately and toss when ready to eat.

## Instructions

### Dressing

Combine 2 tbsp extra virgin olive oil , 1 tbsp red wine vinegar , 0.50 tsp honey , 0.50 tsp dijon mustard , and 0.25 tsp salt in a jar with lid . Shake until emulsified. Set aside.

### Prep the Vegetables

Slice 12 oz cherry tomatoes into halves and chunks.

Peel and quarter 12 oz english cucumber lengthwise, then slice crosswise into thin pieces.

Halve 0.25 cup kalamata olives (pitted).

Thinly slice 0.50 red onion . Soak in 2 tbsp red wine vinegar for 10 minutes , then drain, reserving the vinegar.

### Assemble

Combine the tomatoes, cucumber, olives, and drained onion in a large bowl .

Add 0.50 cup extra virgin olive oil and the reserved vinegar from the onion. Season with kosher salt to taste and 1 pinch dried oregano .

Toss gently to combine, then adjust with more salt or vinegar as needed.

Crumble 4 oz feta cheese over the top and serve.
