Whole Green Lentils with Garlic & Onion
A simple and flavourful method of cooking whole green lentils with garlic and onion. Serve with rice, vindaloo, or Gujarati-style green beans.
Ingredients
- 4 tbsp vegetable oil
- 0.50 tsp cumin seeds
- 4 garlic cloves
- 75 g onion
- 200 g whole green lentils
- 720 ml water
- 1 tsp salt
- 0.25 tsp cayenne pepper

Instructions
Cook the Aromatics
Heat the 4 tbsp vegetable oil in a heavy pot over a medium flame. When hot, put in the 0.50 tsp cumin seeds . A few seconds later, put in the 4 garlic cloves , peeled and finely chopped. Stir and fry until the garlic pieces turn golden.
Now put in the 75 g onion , peeled and chopped. Stir and fry until the onion pieces begin to turn brown at the edges.
Simmer the Lentils
Put in the 200 g whole green lentils , picked over, washed and drained, and the 720 ml water . Bring to the boil. Cover, reduce the heat to low and simmer for about 1 hour or until the lentils are tender.
Season and Finish
Add the 1 tsp salt and 0.25 tsp cayenne pepper . Stir to mix and simmer gently for another 5 minutes .
