# Grilled Zucchini

Tender grilled zucchini with garlic, oregano, and optional balsamic vinegar.

- 2 medium zucchini
- 2 tbsp olive oil
- 1 tsp garlic powder
- 2 cloves garlic
- 1 tsp dried oregano
- 1 tsp salt
- 0.50 tsp black pepper
- 1 tbsp balsamic vinegar
- 1 handful fresh herbs

## Instructions

### Prepare the Zucchini

Wash the 2 medium zucchini and cut off the ends. Slice them into rounds about 1/4-inch thick or cut them lengthwise into planks.

### Make the Marinade

In a large bowl, whisk together the 2 tbsp olive oil , 1 tsp garlic powder (or 2 cloves garlic , minced), 1 tsp dried oregano , 1 tsp salt , and 0.50 tsp black pepper . If using 1 tbsp balsamic vinegar , add it as well.

### Marinate

Add the zucchini slices to the bowl and toss until well coated in the marinade. Let sit 15 minutes to 30 minutes to absorb the flavors.

### Grill the Zucchini

Preheat your grill to medium-high heat (about 400F). Place the zucchini slices directly on the grill. Grill 3 minutes to 4 minutes per side, until they have nice grill marks and are tender but not mushy.

### Serve

Remove from the grill and transfer to a serving plate. Garnish with 1 handful fresh herbs (parsley or basil) if desired.

Note Drizzle with additional olive oil or balsamic vinegar before serving for an extra flavor boost.
