Lemon Poppy Seed Loaf

  • 2.50 cups all-purpose flour
  • 1 tsp baking soda
  • 0.50 tsp baking powder
  • 0.50 tsp salt
  • 2 tbsp poppy seeds
  • 1 cup granulated sugar
  • 0.50 cup brown sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 tbsp lemon zest
  • 0.25 cup fresh lemon juice
  • powdered sugar with a little
  • fresh lemon juice to create a glaze

Instructions

Prepare Oven

Preheat your oven to 350 °F (175°C). Grease your 9x5-inch loaf-pan or line it with parchment paper.

Dry Ingredients

In a large bowl , whisk together the 2.50 cups all-purpose flour , 1 tsp baking soda , 0.50 tsp baking powder , and 0.50 tsp salt . Stir in the 2 tbsp poppy seeds . Set aside.

Wet Ingredients

In another large bowl , beat the 1 cup granulated sugar , 0.50 cup brown sugar packed, and 1 cup vegetable oil until well combined.

Beat in the 3 eggs one at a time. Mix in the 2 tbsp lemon zest and 0.25 cup fresh lemon juice until fully incorporated.

Combine and Bake

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Pour the batter into the prepared loaf-pan and smooth the top. Bake for 50-60 minutes , or until a toothpick inserted into the center comes out clean.

Cool

Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire-rack to cool completely.

Optional Glaze

If desired, mix powdered sugar with a little fresh lemon juice to create a glaze . Drizzle over the cooled loaf. Slice and serve.
