## Ingredients

- 2 cup dried lentils
- 2 onion
- 4 cloves garlic
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 can diced tomatoes
- 2 cups water
- \- salt
- \- black pepper to taste
- \- fresh parsley or cilantro if desired and serve warm on its own

## Instructions

Rinse the 1 cup dried lentils under cold water and drain.

Chop the onion . Mince the 2 cloves garlic .

### Cook

In a pot over medium heat, warm the 2 tbsp olive oil . Add the onion and 2 cloves garlic and sauté until softened, 4 minutes .

Stir in the rinsed 1 cup dried lentils and 1 tsp ground cumin . Mix well for 1 minute .

Add the 1 can diced tomatoes with their juice and 2 cups water , or enough to cover the lentils by about an inch. Bring to a boil, then reduce heat to low, cover, and simmer until the lentils are tender, 25 minutes .

### Season and Serve

Taste and season with salt to taste and black pepper to taste .

Garnish with fresh parsley or cilantro if desired and serve warm on its own , over rice, or in wraps.

Note You can substitute curry powder for the cumin.

Note Use vegetable broth instead of water for more flavor.
