- 25 pounds potatoes
- 2 cloves garlic
- 1 tablespoon fine sea salt
- 6 tablespoons butter
- 1 cup whole milk
- 2 teaspoons fine sea salt
- 4 ounces cream cheese

## Instructions

Peel the 5 pounds potatoes (half Yukon Gold, half Russet) or leave the skins on.

Cut into evenly-sized chunks about 1 inch thick and transfer to a large stockpot filled with cold water.

### Butter Mixture

Note Do not boil the milk.
