  • 1.50 tbsp granulated sugar
  • 1 tbsp baking powder
  • 0.75 cup unsalted butter
  • 1 cup buttermilk
  • 4 tbsp unsalted butter

  • 8 fresh sage leaves
  • 1 tbsp fresh thyme leaves
  • 0.50 tsp cayenne powder
  • 1.50 tsp fennel powder
  • 0.50 tsp MSG
  • 1 tbsp light brown sugar

Instructions

Biscuit

Pre-heat oven to 400 °F (204°C).

In a medium bowl , whisk together 2.50 cups all-purpose flour , 1 tsp fine sea salt , 1.50 tbsp granulated sugar , and 1 tbsp baking powder until combined.

Add 0.75 cup unsalted butter , very cold, cut into ½" (12mm) cubes. Using a pastry blender or fork , cut the butter into the flour until you create pea-size balls.

Stir in 1 cup buttermilk until a rough and shaggy dough forms. Turn out onto a clean work surface and lightly knead until it just comes together. Handle the dough as little as possible.

Gently roll into a rough rectangle. Fold into thirds like a letter, then roll out once more until roughly ¾" (2cm) thick.

Using a 4 " (10cm) biscuit cutter , cut out as many rounds as possible and place on a baking sheet with greased parchment paper. Re-combine the trim, roll out again, and cut more biscuits until all the dough is used.

Lightly brush tops with extra buttermilk and bake for 12-14 minutes or until golden brown.

Optionally brush tops with 2 tbsp unsalted butter , melted, and sprinkle with flaky sea salt to taste. Let cool on a wire rack .

Sausage

Mix 2 lbs ground pork with 8 fresh sage leaves , finely chopped, 1 tbsp fresh thyme leaves , finely chopped, 0.50 tsp cayenne powder , 1.50 tsp fennel powder , 0.50 tsp MSG , 2.50 tsp fine sea salt , 1 tbsp light brown sugar , and a pinch of fresh nutmeg in a large bowl . Knead the meat like dough to incorporate evenly and emulsify. If grinding your own, run through a meat grinder twice.

Lightly grease a skillet with cooking spray over medium-high heat. Roll the meat into balls around 4 oz (113g) each. Place 1-2 balls in the pan and flatten with a spatula or burger press until about ¼" (6mm) thick. Sear for 2 minutes or until golden brown, then flip and sear for 1 minute until fully cooked. Repeat with remaining pork. Keep patties warm until serving.

Eggs

In a large bowl , whisk together 8 large eggs , a splash of heavy cream , kosher salt to taste, and freshly ground black pepper to taste until thoroughly combined.

Heat a 12 " (30cm) skillet over medium-high. Add 2 tbsp unsalted butter and let melt, swirling to coat. Add enough egg to just coat the bottom of the pan. Let the eggs start to set, dragging cooked egg back to the center and allowing uncooked eggs to flow to the sides.

Once the egg is about 90% cooked, remove from heat and fold all four sides towards the center to create a square about the same size as the biscuit. Keep warm while cooking remaining eggs, adding more unsalted butter to the pan as needed.

Assembly

Cut the biscuits in half. Place a pat of salted butter between the halves of each biscuit, wrap lightly in foil, and place in a warm oven at 250 °F (121°C) for 10 minutes or until hot and melted.

Open a biscuit and spread both sides with mayo to taste. Top the bottom half with a slice of 8 slices cheddar cheese . Melt with a kitchen torch or under the broiler , then top with a slice of 8 slices Monterey jack cheese and melt again. Add a sausage patty and a folded egg, then crown your breakfast sandwich. Repeat with remaining biscuits.
