About
Salmon marinated in a savory-sweet miso glaze and broiled until the surface is golden and caramelized while the inside stays moist. Based on the classic technique from Just One Cookbook and RecipeTin Eats. Use skin-on fillets under 1 inch thick.
Instructions
Make the Marinade
In a bowl or flat tray, mix 2 tablespoons white miso paste , 1 tablespoon sake , 1 tablespoon mirin , 1 tablespoon soy sauce , and 0.25 teaspoon toasted sesame oil until smooth.
Marinate
Place 2 skin-on salmon fillets in the marinade skin side up. Spoon marinade over the top to coat all sides. Cover and refrigerate for 1-2 hours .
Broil
Set oven to broil on high. Place rack about 9 inches from the top heating element. Line a baking sheet with foil and lightly oil it.
Remove all excess marinade from the salmon — miso burns easily under the broiler. Place skin side down on the sheet.
Broil for 10-13 minutes until the surface is golden and the thickest part reaches 125-130°F (52-54°C). No need to flip.
Bake Alternative
If you don't have a broiler, bake at 425 °F (220°C) for 18-20 minutes on the center rack. For a golden finish, switch to broil for the last 2-3 minutes.
Serve
Top with toasted sesame seeds and sliced scallions . Serve with steamed rice.
