Fat is high from the walnut crust. For lower fat, skip the pan-fry and bake straight at 425°F.

- 0.50 tsp ground cumin
- 1 tsp coarse sea salt
- 16 oz tilapia
- 0.50 tbsp canola oil

One of my favorite fish dishes. Because of the walnuts in the coating, you've got to be able to have some fats when you make this dish. To use less fat, skip the pan frying step and put it straight into the oven to bake, lower the temp to 425°F to keep from burning over a longer cooking time.

## Instructions

Preheat oven to 450°F. Toss 0.50 cup walnuts onto a baking sheet to toast while the oven preheats, careful not to burn!

Combine toasted walnuts, 1 tbsp cracked peppercorns , 0.50 tsp ground cumin , and 1 tsp coarse sea salt in a mini food processor . Pulse until it forms a crust-like texture.

Dump crust mix onto a plate and press both sides of 16 oz tilapia into the crust mix.

Heat a skillet with 0.50 tbsp canola oil over medium-high heat. When very hot, add fish and sear 2 minutes per side until brown and crusty.

Finish in the 450 °F oven for 5 minutes .
