Onion Cheese Buns
Soft, tender buns filled with a swirl of cheese, minced onions, and herbs.
Ingredients
- 0.33 cup dried onions
- 0.33 cup hot water
- 1 tbsp pizza seasoning
- 0.33 cup cheese powder
- 4 tbsp butter
- 1 large egg
- 0.75 cup warm water
- 2 tsp instant yeast
- 1.50 tsp salt
- 3 cups all-purpose flour
- 0.25 cup dry milk
- 2-3 tbsp mozzarella cheese

Instructions
Filling
Soak 0.33 cup dried onions , minced, in 0.33 cup hot water while making the dough.
Just before shaping the dough, stir in 1 tbsp pizza seasoning , 0.33 cup cheese powder , and 1 tbsp butter , softened.
Dough
In a large mixing bowl or the bowl of a stand mixer , whisk together 1 large egg and 0.75 cup warm water .
Add 2 tsp instant yeast , 3 tbsp butter softened, 1.50 tsp salt , 3 cups all-purpose flour , and 0.25 cup dry milk to the bowl.
Stir to combine, then knead until smooth and elastic, 5-10 minutes .
Place the dough in a lightly greased bowl , turning to coat all sides. Cover with lightly greased plastic wrap or a lid and let rise until doubled in bulk, about 2 hours .
Assembly
Turn the dough out onto a lightly greased work surface or silicone mat .
Pat, then roll the dough into an 18 " x 10 " rectangle.
Spread with the onion mixture, leaving 1 " free of filling along the long edge farthest from you.
Starting with the long edge closest to you, roll the dough into a log, pinching the seam closed.
Cut the log into 12 slices.
Place the buns on a greased baking sheet , leaving about 1 " between them. Or, for softer sides, place them close together in a lightly greased 9 " x 9 " pan . Cover and let rise until puffy, about 1 hour .
Sprinkle with 2-3 tbsp mozzarella cheese , shredded.
Towards the end of the rising time, preheat the oven to 350°F.
Bake
Bake the buns for 22-26 minutes , or until golden brown.
Remove from the oven and cool on a wire rack .
