Instructions
Boil
Peel and cut 5 Yukon Gold potatoes into even chunks. Boil in salted water until tender, 15 minutes .
Drain well and return to the pot .
Mash
Roughly mash the potatoes until smooth. Add ¼ cup butter , ¼ cup heavy cream , and 1 teaspoon salt . Mash until super soft and creamy.
Finish
Fold in ¼ cup Parmesan cheese for extra flavor. Sprinkle with chopped chives and serve.
