Roughly mash the potatoes until smooth. Add ¼ cup butter , ¼ cup heavy cream , and 1 teaspoon salt . Mash until super soft and creamy.

Note Warm the butter and cream slightly before adding, cold dairy makes the potatoes gummy.

### Finish

Fold in ¼ cup Parmesan cheese for extra flavor. Sprinkle with chopped chives and serve.
