- 360 g lukewarm water
- 15 g sugar
- 8 g active dry yeast
- 540 g bread flour
- 12 g salt
- 9 g dough conditioner
- 30 g olive oil

## Instructions

### Yeast Starter

In a small bowl, combine 120 g lukewarm water , 5 g sugar , and 8 g active dry yeast . Let stand 10-15 minutes until foamy.

### Dough

In the bowl of a stand mixer fitted with a dough hook , combine 540 g bread flour , 10 g sugar , 12 g salt , and 9 g dough conditioner .

Add the yeast mixture and 240 g lukewarm water to the flour mixture. Mix on low speed for 5 minutes until the dough starts to come together.

Add 30 g olive oil and continue kneading for 5 minutes until the dough is smooth and elastic.

### Hand Kneading

Turn the dough out onto a very lightly floured work surface and knead by hand for 5 minutes , using as little extra flour as possible.

### First Rise

Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour or until doubled in size.

### Shaping

Gently deflate the dough and divide into 6-8 equal portions (90-67g each). Shape each portion into rolls about 15-18cm long.

Place the shaped rolls on a parchment-lined baking sheet , cover loosely with plastic wrap, and let rise for 45-60 minutes until nearly doubled in size.

### Oven Baking

Preheat your oven to 425 F. Place a small tray of boiling water in the back corner of the oven to create humidity.

Using a sharp knife or razor blade, cut a shallow slit down the center of each roll.

Bake for 10 minutes , then reduce the heat to 400 F and bake for an additional 20-25 minutes until the rolls are an even golden brown and sound hollow when tapped.

Note The dough conditioner helps maintain moisture inside the roll even during longer bakes.

### Bread Cloche Variation

Preheat your bread cloche in the oven at 475 F for at least 30 minutes .

Place 2-3 shaped rolls on parchment paper, loosely cover, and let rise for the final time ( 45 minutes ).

Carefully remove the hot cloche from the oven, remove the lid, and transfer the risen dough on the parchment paper into the cloche.

Using a sharp knife or razor blade, cut a shallow slit down the center of each roll.

Cover with the cloche lid and return to the oven. Bake covered for 15 minutes . Remove the lid and bake for an additional 10-15 minutes until golden brown and hollow when tapped.

### Cooling
