Philly Roll with Malt Powder

Philly cheese steak rolls made with diastatic malt powder, baked in a bread cloche for a crisp crust.

Ingredients

  • 360 g lukewarm water
  • 15 g sugar
  • 8 g active dry yeast
  • 540 g bread flour
  • 12 g salt
  • 3 g diastatic malt powder
  • 30 g olive oil

Instructions

Dough

In a small bowl, combine 120 g lukewarm water , 5 g sugar , and 8 g active dry yeast . Let stand 10-15 minutes until foamy.

In the bowl of a stand mixer fitted with a dough hook , combine 540 g bread flour , 10 g sugar , 12 g salt , and 3 g diastatic malt powder .

Add the yeast mixture and 240 g lukewarm water to the flour mixture. Mix on low speed for 5 minutes until the dough starts to come together.

Add 30 g olive oil and continue kneading for 5 minutes until the dough is smooth and elastic.

Turn the dough out onto a very lightly floured work surface and knead by hand for an additional 5 minutes , using as little extra flour as possible.

First Rise

Place the dough in a lightly oiled bowl, cover with plastic wrap , and let rise in a warm place for 1 hour or until doubled in size.

Shaping

Gently deflate the dough and divide into 6-8 equal portions (90-67g each).

Shape each portion into rolls about 15-18cm long.

Final Rise

Preheat the bread cloche in the oven at 475 °F for at least 30 minutes .

Place 2-3 shaped rolls on parchment paper , loosely cover, and let rise for 45 minutes .

Baking

Carefully remove the hot cloche from the oven, remove the lid, and transfer the risen dough on the parchment paper into the cloche.

Using a sharp knife or razor blade , cut a shallow slit down the center of each roll.

Cover with the cloche lid and return to the oven.

Bake covered for 15 minutes , then remove the lid and bake for an additional 10-15 minutes until the rolls are golden brown and sound hollow when tapped.

Cooling

Transfer the rolls to a wire rack to cool completely before using for Philly cheese steak sandwiches.
