Potatoes with Sesame Seeds

Easy, delicious Til Ke Aloo — waxy potatoes stir-fried with cumin, mustard, and sesame seeds. Pairs well with Indian meals or simple roasted and grilled meats.

  • 1 kg waxy potatoes
  • 6 tbsp vegetable oil
  • 2 tsp cumin seeds
  • 2 tsp black mustard seeds
  • 2 tbsp sesame seeds
  • 2 tsp salt
  • 0.50 tsp Kashmiri chilli powder
  • 1 tbsp lemon juice

Instructions

Boil the 1 kg waxy potatoes in their jackets. Drain and cool them for 3-4 hours. Peel the potatoes and chop them into 2 cm cubes.

Cook

Heat the 6 tbsp vegetable oil in a 25-30cm frying-pan over a medium flame. When the oil is very hot, put in the 2 tsp cumin seeds , 2 tsp black mustard seeds and 2 tbsp sesame seeds . As soon as the seeds begin to pop, put in the chopped potatoes. Stir and fry the potatoes for about 5 minutes .

Season

Add the 2 tsp salt , 0.50 tsp Kashmiri chilli powder and 1 tbsp lemon juice . Stir and fry for another 3 minutes .

> A non-stick or well-seasoned cast-iron frying pan works best.

> Look for a few brown spots on the potatoes for best flavor.

== Season ==

Add the @salt{2%tsp}, @Kashmiri chilli powder{0.5%tsp} and @lemon juice{1%tbsp}. Stir and fry for another ~{3%minutes}.
