Old-Fashioned Pumpkin Pie
A timeless pumpkin pie with creamy spiced filling and flaky buttery crust, perfect for Thanksgiving or any fall gathering.
Ingredients
- 2 cup all-purpose flour
- 2 tsp ground cinnamon
- 1.75 tsp kosher salt
- 0.75 cup shortening
- 6 tbsp ice water
- 1.13 cup sugar
- 1 tbsp ground cinnamon
- 1.50 tsp ground ginger
- 0.50 tsp ground cloves
- 3 large eggs
- 15 oz canned pumpkin puree
- 1.13 cup evaporated milk

Instructions
Pie Dough
In a large bowl, whisk together the 2 cup all-purpose flour (plus extra for dusting), 2 tsp ground cinnamon , and 1 tsp kosher salt .
Using a pastry blender or two knives, cut the 0.75 cup shortening (cubed) into the flour mixture until it resembles pea-sized crumbs.
Gradually add the 6 tbsp ice water , 1 tablespoon at a time, stirring gently until the dough comes together.
Transfer the dough to a work surface lined with plastic wrap. Shape it into a disc, wrap tightly, and refrigerate for 30 minutes .
Filling
Preheat the oven to 425 F (220 C).
In a small bowl, mix together the 1.13 cup sugar (1 cup plus 2 tablespoons), 1 tbsp ground cinnamon (plus a pinch), 1.50 tsp ground ginger , 0.50 tsp ground cloves , and 0.75 tsp kosher salt .
In a large bowl, whisk the 3 large eggs . Add the 15 oz canned pumpkin puree and spice mixture, whisking until smooth. Gradually whisk in the 1.13 cup evaporated milk (1 cup plus 2 tablespoons) until fully combined.
Roll Out the Dough
Once chilled, roll the dough on a lightly floured surface into a 0.25-inch-thick (6mm) round. Keep the surface and rolling pin floured to prevent sticking.
Transfer the dough to a 9.5-inch (24cm) pie pan . Tuck the edges under and crimp.
Assemble and Bake
Pour the filling into the prepared pie shell.
Bake for 15 minutes , then reduce the oven temperature to 350 F (180 C) and bake for an additional 40 minutes , or until the center jiggles slightly.
Cool and Serve
Cool the pie on a wire rack for 2 hours .
Slice and serve with whipped cream or ice cream .
