- 1400 gram tomatoes
- 3 tbsp vegetable oil
- 0.50 tsp cumin seeds
- 3 garlic cloves
- 110 gram onion
- 1.50 green chillies
- 1 tsp fresh ginger
- 1 tsp salt
- 1 tsp sugar

Drop the 700 gram tomatoes into a pot of rapidly boiling water for 15 seconds . Drain, rinse under cold water and peel. Core the tomatoes and cut them into roughly 2.5 cm cubes.

Heat the 3 tbsp vegetable oil in a medium-sized pot over a medium flame. When hot, put in the 0.50 tsp cumin seeds . A few seconds later, put in the 3 garlic cloves , peeled and very finely chopped. Let the garlic pieces turn a golden colour. Now put in the 110 gram onion , peeled and chopped, and the 1.50 green chillies , finely sliced with seeds. Stir and saute for about 2 minutes . Now put in the 700 gram tomatoes , 1 tsp fresh ginger , peeled and very finely grated, 1 tsp salt , and 1 tsp sugar , preferably brown sugar. Bring to the boil.

Cover, leaving the lid slightly ajar, reduce the heat to low and simmer for about 10 minutes , or until the tomatoes are just tender.

Note This is a wet dish with a thinnish sauce. Serve in individual bowls alongside rice. Pairs well with beef baked with yogurt and black pepper, spicy baked chicken, or grilled mackerel with lemon and fresh green coriander.
