  • 3 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
  • 4 cups steamed rice

Instructions

Combine 3 tablespoons rice vinegar , 2 tablespoons sugar , and 1 tablespoon kosher salt in a small bowl . Whisk to dissolve.

Place 4 cups steamed rice in a large bowl .

Pour the vinegar mixture over the hot rice a little bit at a time, gently turning and mixing the rice with a cutting motion. Fan the rice while mixing to cool it and give it a glossy finish.

Use immediately for sushi, or cover with a damp cloth until ready to use.
