Soft, buttery dinner rolls with cinnamon honey butter

Ingredients

  • 465 g whole milk
  • 120 g warm water
  • 12 g instant yeast
  • 1050 g all-purpose flour
  • 110 g granulated sugar
  • 14 g fine sea salt
  • 0.13 tsp diastatic malt powder
  • 50 g unsalted butter
  • whole eggs
  • 3 tbsp melted butter
  • smoked flaky salt
  • cinnamon sticks
  • 161 g salted butter
  • 0.13 tsp black pepper
  • 2 tsp cinnamon powder
  • 0.25 tsp fresh grated nutmeg
  • vanilla bean
  • 29 g powdered sugar
  • 20 g wildflower honey
  • 20 g buckwheat honey

Method

In a medium pot , over medium-high heat, add the 465 g whole milk and bring it to a boil. Cut the heat, pour into a bowl and cool over an ice bath.

Once cooled, add 120 g warm water , heat to 95°F, add 12 g instant yeast , dissolve and reserve.

In a stand mixer bowl, add the 1050 g all-purpose flour , 110 g granulated sugar , 12 g fine sea salt , and 0.13 tsp diastatic malt powder . The malt powder is optional but helps with color and flavor.

Using the hook attachment, add 50 g unsalted butter melted and slightly cooled in a stream and mix. Once incorporated, add the milk mixture and whole eggs . Mix until the dough does not stick to the sides of the bowl.

Take the dough out, form a ball, place into a greased bowl, cover with plastic wrap, and let rise for 1 hours at room temperature until doubled.

Remove plastic wrap and punch the dough. Put on a floured surface, cut into 40 even pieces, and shape into balls.

Place balls on a lined sheet tray , cover with plastic wrap, and proof for 20 minutes .

Preheat oven to 375°F.

Remove wrap, spray with water, and bake for 15 minutes .

Brush each roll with 3 tbsp melted butter and sprinkle with smoked flaky salt .

Lightly char cinnamon sticks and break into tiny pieces by pounding.

Place 161 g salted butter softened, 2 g fine sea salt , 0.13 tsp black pepper finely ground, 2 tsp cinnamon powder , 0.25 tsp fresh grated nutmeg , and the beans from vanilla bean scraped in a mixing bowl and whisk until smooth.

Add 29 g powdered sugar and whisk vigorously to incorporate air.

Add 20 g wildflower honey and 20 g buckwheat honey and incorporate.

Serve rolls warm with cinnamon honey butter.

Lightly char @cinnamon sticks{3} and break into tiny pieces by pounding.

Place @salted butter{161%g} softened, @fine sea salt{2%g}, @black pepper{1/8%tsp} finely ground, @cinnamon powder{2%tsp}, @fresh grated nutmeg{1/4%tsp}, and the beans from @vanilla bean{1} scraped in a #mixing bowl{} and whisk until smooth.

Add @powdered sugar{29%g} and whisk vigorously to incorporate air.

Add @wildflower honey{20%g} and @buckwheat honey{20%g} and incorporate.

Serve rolls warm with cinnamon honey butter.
