Ingredients

  • 6 strips bacon
  • 3 tablespoons butter
  • yellow onion
  • 3 cloves garlic
  • 0.33 cup all-purpose flour
  • 2.50 lbs gold potatoes
  • 4 cups chicken broth
  • 2 cups milk
  • 0.67 cup heavy cream
  • 1.50 teaspoons salt
  • 1 teaspoon ground pepper
  • 0.25 teaspoon ancho chili powder
  • 0.67 cup sour cream
  • shredded cheddar cheese

An easy and delicious creamy potato soup made in just one pot. Loaded with bacon and creamy potato goodness.

Instructions

Cook Bacon

Place 6 strips bacon in a dutch oven or soup pot over medium heat and cook until bacon is crisp and browned.

Remove bacon pieces and set aside, leaving the fat in the pot.

Build the Base

Add 3 tablespoons butter and yellow onion and cook over medium heat until onions are tender ( 3-5 minutes ).

Add 3 cloves garlic and cook until fragrant ( 30 seconds ).

Sprinkle 0.33 cup all-purpose flour over the ingredients in the pot and stir until smooth, using a whisk if needed.

Simmer

Add 2.50 lbs gold potatoes to the pot along with 4 cups chicken broth , 2 cups milk , 0.67 cup heavy cream , 1.50 teaspoons salt , 1 teaspoon ground pepper , and 0.25 teaspoon ancho chili powder . Stir well.

Bring to a boil and cook until potatoes are tender when pierced with a fork ( 10 minutes ).

Puree

Reduce heat to simmer. Remove approximately half of the soup to a blender (be careful, it will be hot) and puree until smooth. Alternatively, use an immersion blender .

Return the pureed soup to the pot and add 0.67 cup sour cream and the reserved bacon pieces. Stir well.

Allow soup to simmer for 15 minutes before serving.

Serve

Top with shredded cheddar cheese , chives , sour cream , and bacon .

== Cook Bacon ==

== Build the Base ==

Add @butter{3%tablespoons} and @yellow onion{1}(chopped, about 1.5 cups) and cook over medium heat until onions are tender (~onions{3-5%minutes}).

Add @garlic{3%cloves}(minced) and cook until fragrant (~garlic{30%seconds}).

Sprinkle @all-purpose flour{1/3%cup} over the ingredients in the pot and stir until smooth, using a #whisk{} if needed.

== Simmer ==

Add @gold potatoes{2.5%lbs}(peeled and diced into pieces no larger than 1 inch) to the pot along with @chicken broth{4%cups}, @milk{2%cups}, @heavy cream{2/3%cup}, @salt{1.5%teaspoons}, @ground pepper{1%teaspoon}, and @ancho chili powder{1/4%teaspoon}. Stir well.

Bring to a boil and cook until potatoes are tender when pierced with a fork (~potatoes{10%minutes}).

== Puree ==

Reduce heat to simmer. Remove approximately half of the soup to a #blender{} (be careful, it will be hot) and puree until smooth. Alternatively, use an #immersion blender{}.

> I prefer potato soup with chunks of potato — puree just half. For completely creamy soup, puree all of it in batches.

Return the pureed soup to the pot and add @sour cream{2/3%cup} and the reserved bacon pieces. Stir well.

Allow soup to simmer for ~final simmer{15%minutes} before serving.

== Serve ==

Top with @shredded cheddar cheese{}, @chives{}, @sour cream{}, and @bacon{}.
