Broccoli Almond Soup
A healthy broccoli almond soup, light and nutritious — great for weight loss meals.
Ingredients
- 4 cups broccoli florets
- 0.25 cup whole almonds
- 1 tsp extra virgin olive oil
- 4 cloves garlic
- — onion
- to taste salt
- 1 cup milk
- — whole black peppercorns

Instructions
Wash the 2 cups broccoli florets and prepare the rest of the ingredients.
Soak 0.25 cup whole almonds in hot water for about 10 minutes . Peel off the skin from the almonds and set aside.
Cook
Heat 1 tsp extra virgin olive oil in a wok over medium heat. Add 4 cloves garlic , finely chopped, and onion , sliced, and saute until the onions have softened, about 1 minute .
Once the onions have softened, add the 2 cups broccoli florets and saute for about 1 minute . Sprinkle to taste salt , cover the pan and steam cook the broccoli for about 3-4 minutes .
Once the broccoli has steamed just enough to take a bite, turn off the heat. Allow the broccoli onion mixture to cool.
Blend
Once cooled, add the broccoli, soaked almonds and 1 cup milk into a blender . Blend to make a smooth puree.
Finish
Pour the broccoli almond soup into a saucepan and bring it to a brisk boil, then turn off the heat.
Check the salt and adjust according to taste.
Serve
Garnish the Broccoli Almond Soup with whole black peppercorns , coarsely pounded, and serve hot.
Serve along with Garlic Bread With Herb Butter, Zucchini Salad Recipe With Thai Hot Chili Dressing, and Spaghetti with Pesto and Parmesan for a delicious weekend dinner.
