  • 1½ tablespoons minced garlic
  • 2 tablespoons soy sauce
  • 2½ tablespoons Chinese cooking wine
  • 1 teaspoon baking soda
  • 6 cloves thinly sliced garlic
  • 1 stalk chopped green onion

Super addicting tender beef cubes with crispy garlic chips — every single bite is perfect. The secret is baking soda (a Chinese restaurant velveting trick) and always cutting against the grain. Great as an appetizer, snack, or main with rice. Based on a recipe from Tiffy Cooks.

Instructions

Marinate

Cut 2 steak against the grain into bite-sized pieces.

In a bowl , combine the beef with 1½ tablespoons neutral oil , salt and pepper to taste, 1½ tablespoons minced garlic , 2 tablespoons soy sauce , 2½ tablespoons Chinese cooking wine , and 1 teaspoon baking soda . Mix to coat and set aside for 10-20 minutes .

Fry the Garlic

Heat 3 tablespoons neutral oil in a pan over medium heat. Add 6 cloves thinly sliced garlic and fry for 2-3 minutes until crispy and golden brown. The oil will become fragrant.

Remove the garlic chips with a slotted spoon and set aside.

Cook the Steak

Turn the heat up to medium-high. Add the marinated steak cubes in a single layer and let them sit for 30-60 seconds without moving so the bottoms sear.

Fry on high heat for 2-3 minutes until browned on all sides. Add the crispy garlic back in.

Serve

Garnish with 1 stalk chopped green onion and enjoy.
