Gomaae (Spinach with Sesame Dressing)
Horenso no Gomaae, a classic Japanese spinach salad with sesame dressing.
Ingredients
- 3 tbsp white sesame seeds
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp kosher salt
- 1 bunch spinach

Instructions
Sesame Dressing
Start by preparing the sesame dressing. Toast the 3 tbsp white sesame seeds in an ungreased frying pan over medium-high heat, shaking the pan constantly until the seeds are fragrant.
Transfer the toasted sesame seeds to a mortar and grind them with a pestle , leaving some seeds whole for texture. Add the 1 tbsp soy sauce and 1 tbsp sugar to the ground sesame seeds and mix well. Set aside.
Blanch the Spinach
Bring a large pot of water to a boil and add the 1 tsp kosher salt . Plunge the 1 bunch spinach , stem ends first, into the boiling water and hold for 15 seconds . Then submerge completely and cook for an additional 45 seconds .
Quickly transfer the blanched spinach to a bowl of ice water to stop the cooking process and preserve its vibrant green color.
Prepare and Serve
Drain the spinach and squeeze out excess water. Cut the spinach into 1-inch pieces.
Add the prepared spinach to the sesame dressing and toss to combine thoroughly.
Serve at room temperature or chilled.
