Mom's Chinese Chicken Salad
Fresh Chinese chicken salad with shredded cabbage, carrot, and a tangy sesame-ginger dressing.
Ingredients
- 2 tbsp light soy sauce
- 3 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp grapeseed oil
- 1 tsp sugar
- 1.50 tsp fresh ginger
- 1 clove garlic
- 0.50 tsp black pepper
- 4 cups Chinese cabbage
- 1.50 cups red cabbage
- 1 cup carrot
- 2 cups cooked chicken
- 0.50 cup scallions
- 1 cup crunchy noodles
- 2 tsp sesame seeds

Instructions
Dressing
2 tbsp light soy sauce 3 tbsp rice vinegar 1 tbsp toasted sesame oil 2 tbsp grapeseed oil 1 tsp sugar 1.50 tsp fresh ginger 1 clove garlic 0.50 tsp black pepper
Combine all dressing ingredients in a jar and shake well. Set aside for 10 minutes so flavors meld.
Salad
4 cups Chinese cabbage 1.50 cups red cabbage 1 cup carrot 2 cups cooked chicken 0.50 cup scallions 1 cup crunchy noodles 2 tsp sesame seeds
Finely shred the Chinese cabbage and red cabbage . Julienne the carrot . Shred the cooked chicken . Diagonally slice the scallions .
Place all salad ingredients in a large mixing bowl with half of the crunchy noodles .
Drizzle the dressing over the salad and toss to combine.
Divide into bowls and top with the remaining crunchy noodles and sesame seeds .
