Whole Green Lentils with Spinach and Ginger

A very nourishing dish of whole green lentils simmered with spinach, ginger, and fresh coriander.

Ingredients

  • 200 g whole green lentils
  • 720 ml water
  • 6 tbsp vegetable oil
  • 1-2 fresh hot green chillies
  • 1 tsp fresh ginger
  • 8 tbsp fresh green coriander
  • 560 g fresh spinach
  • 2 tsp salt
  • to taste black pepper
  • 2 tbsp lemon juice

Instructions

Cook the Lentils

Put the 200 g whole green lentils and the 720 ml water into a heavy pot and bring to the boil. Cover, reduce the heat to low and simmer gently for 45-60 minutes .

Prepare the Spinach

Over a medium flame, heat the 6 tbsp vegetable oil in a pot large enough to hold the spinach. When hot, put in the 1-2 fresh hot green chillies , finely sliced, and the 1 tsp fresh ginger , peeled and very finely grated. Stir and fry for 10 seconds .

Add the 8 tbsp fresh green coriander , chopped, and the 560 g fresh spinach , trimmed, washed and chopped. Stir and cook until the spinach has wilted.

Combine and Simmer

Now put in the cooked lentils and the 2 tsp salt , or to taste. Stir to mix and bring to a simmer. Cover and cook very gently for 10-15 minutes .

Finish

Add the to taste black pepper and 2 tbsp lemon juice , or more to taste. Stir to mix, then cook, uncovered, for another 5 minutes . Check the seasonings and serve.

== Cook the Lentils ==

Add the @fresh green coriander{8%tbsp}, chopped, and the @fresh spinach{560%g}, trimmed, washed and chopped. Stir and cook until the spinach has wilted.

== Combine and Simmer ==

Now put in the cooked lentils and the @salt{2%tsp}, or to taste. Stir to mix and bring to a simmer. Cover and cook very gently for ~{10-15%minutes}.

== Finish ==

Add the @black pepper{to taste} and @lemon juice{2%tbsp}, or more to taste. Stir to mix, then cook, uncovered, for another ~{5%minutes}. Check the seasonings and serve.
