Hobak Bokkeum
A simple stir-fried zucchini side dish (Korean banchan).
Ingredients
- 1 medium, about 10-12 ounces zucchini
- 2 saeujeot
- 2 tsp garlic
- 2 scallion
- 1 tbsp cooking oil
- 1 medium zucchini
- 2 tbsp water
- 1 tsp sesame oil
- 1 tsp, preferably crushed sesame seeds

Instructions
Cut the 1 medium, about 10-12 ounces zucchini in half lengthwise (cut into quarters if using a round zucchini). Then cut crosswise into about 1/4 to 1/3-inch thick slices.
Finely chop the saeujeot (salted shrimp){2%tsp}. This is very salty, so start with 2 teaspoons and add more if needed. You can also use salt or fish sauce to taste.
Mince the 1 tsp garlic .
Finely chop the scallion .
Cook
Heat a pan with 1 tbsp cooking oil over medium-high heat.
Add the 1 medium zucchini , 1 tsp garlic , and saeujeot (salted shrimp){2%tsp} to the pan. Cook for 2-3 minutes , stirring well. Add 2 tbsp water to the pan while stir-frying. Add another spoon or two of water if the pan gets dry.
Add the scallion , 1 tsp sesame oil , and 1 tsp, preferably crushed sesame seeds . Continue to cook until the zucchini is softened and turns translucent, about 2-3 minutes .

> Do not overcook. Taste and add more salted shrimp or salt if necessary.
Add the @scallion{1}, @sesame oil{1%tsp}, and @sesame seeds{1%tsp, preferably crushed}. Continue to cook until the zucchini is softened and turns translucent, about ~{2-3%minutes}.
