Sheet pan chicken and broccoli with a sweet garlic-ginger date sauce, finished with a drizzle of thickened sauce and sesame toppings.
Instructions
Garlic Ginger Sauce
Blend 0.75 cup low sodium soy sauce , 0.50 cup water , 0.25 cup white vinegar , 0.25 cup olive oil , 1 piece fresh ginger , 4 cloves garlic , and 4 medjool dates in a blender until smooth.
Sheet Pan Action
Preheat the oven to 425 degrees .
Place 1 lb boneless skinless chicken breasts , 1 head broccoli , and red pepper on a sheet pan .
Pour about 1/2 cup sauce over the chicken and a few tablespoons over the veggies. Bake for 12-15 minutes .
Finish It Fancy
While the broccoli and chicken are roasting, simmer another 1/2 cup or so of sauce in a small saucepan over medium low heat until thickened.
Drizzle the thickened sauce over the finished chicken and broccoli. Finish with sesame oil , sesame seeds , and green onions .
