Instructions

Marinate Chicken

Preheat the oven to 425 degrees .

Toss 2 lbs boneless skinless chicken breasts with 3 tablespoons spicy seasoning mix and a quick stream of 3 tablespoons olive oil . Stir to combine and store in the fridge for about 30 minutes while you prep other ingredients.

Prep Sheet Pans

Arrange 3 sweet potatoes on a sheet pan, preferably one with edges to catch drips.

Arrange 5 cups broccoli florets on a separate sheet pan.

Drizzle vegetables with olive oil and sprinkle generously with coarse sea salt and freshly cracked pepper .

Arrange the chicken on a separate sheet pan.

Bake

Bake all ingredients for 12-15 minutes . Remove the broccoli and chicken. Stir sweet potatoes and roast for 15 minutes or so.

Serve

8

Divide servings into containers. Serve with avocado / hummus / lemon juice / chives / olive oil .
