Ingredients

  • 16 oz jumbo shrimp
  • 2 coconut oil spray
  • 1 slice whole grain bread
  • 2 tbsp grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 0.25 tsp fine sea salt
  • 0.13 tsp black pepper
  • 1 tsp grated lime zest
  • 1 tbsp extra virgin olive oil
  • 0.25 cup liquid egg whites

If you're a shrimp lover, rejoice! You have other options besides boiling, steaming or sautéing! This crumb coating is along the lines of the sea bass recipe, but with some parmesan for an extra boost of flavor. Nice with a green salad on the side drizzled with some EVOO to complete your fat requirement. Serve over steamed rice, cooked quinoa or whole grain pasta to hit your carbs.

Instructions

Preheat oven to 450°F.

Rinse and dry 16 oz jumbo shrimp , blotting well with paper towels .

Line a baking sheet with parchment paper and spray with coconut oil spray .

Break 1 slice whole grain bread into small chunks and add to a mini food processor along with 2 tbsp grated parmesan cheese , 1 tsp garlic powder , 1 tsp dried parsley , 0.25 tsp fine sea salt , 0.13 tsp black pepper , 1 tsp grated lime zest , and 1 tbsp extra virgin olive oil .

Process until moist crumbs form.

Add 0.25 cup liquid egg whites to one shallow dish , and bread crumb mix to a second shallow dish .

Working with 3 or 4 shrimp at a time, add first to egg whites to coat, then to crumb mix.

Place coated shrimp on prepared baking sheet. Press any leftover crumb mix onto any uncoated spots.

Spray coated shrimp very well with coconut oil spray .

Bake in the middle of your oven for 7 minutes .

Remove pan, flip each shrimp. Return to the oven for 3 minutes , until shrimp are cooked through.
