- 2 lb shrimp

A quick and flavorful marinade for shrimp. Reducing the macros for the marinade ingredients by half is conservative, you're probably not consuming half of that EVOO, but 50% is a safe number. Round out your fat requirements with a few nuts or a drizzle of additional EVOO. Awesome served with steamed rice.
Instructions
Marinade
Combine 14.50 oz diced tomatoes , 0.25 cup extra virgin olive oil , 0.25 cup fresh basil , 6 cloves garlic , 1 tbsp white balsamic vinegar , 0.50 tsp salt , and 0.25 tsp cayenne pepper in a food processor . Process until smooth.
Add 2 lb shrimp and marinade to a glass dish . Cover and refrigerate for 30 minutes to 1 hour.
Grill
Preheat a sprayed grill or lightly oiled grill pan over medium heat.
Discard excess marinade. Cook shrimp 3 minutes per side.
