A simple steak and sweet potato dinner. The sweet potatoes roast in the oven while you sear the steaks on the stove. Great for meal prep — reheats well.

Instructions

Sweet Potatoes

Preheat oven to 400°F.

Cube 2 medium sweet potatoes into 1/2-inch pieces. Toss with 1 tbsp extra virgin olive oil , 0.50 tsp salt , and 0.25 tsp black pepper .

Spread on a baking sheet in a single layer. Roast for 25 minutes , flipping halfway through, until tender and caramelized.

Steak

Pat 2 ribeye steak dry with paper towels . Season generously with 1 tsp salt and 0.50 tsp black pepper on both sides. Let rest at room temperature while the sweet potatoes roast.

Heat a cast iron skillet over high heat until smoking. Add 1 tbsp extra virgin olive oil .

Sear steaks 4 minutes per side for medium-rare (adjust to preference). Let rest 5 minutes before slicing against the grain.

Serve steak alongside roasted sweet potatoes.
