  • purple onion
  • white onion
  • 3 bell peppers
  • 1 tbsp olive oil
  • salt and pepper

Equipment

  • sous vide immersion circulator

Instructions

Preheat sous vide immersion circulator to 183°F.

Slice the purple onion , white onion , and 3 bell peppers into 1/2 inch slices.

Place sliced vegetables in a vacuum bag with 1 tbsp olive oil and salt and pepper . Seal according to manufacturer's instructions.

Cook in the water bath for 15 minutes until tender-crisp.

Remove from bag and serve as fajita filling or alongside your favorite protein.
