Instructions
Marinate the Beef
Cut 19 oz beef steak into bite-sized pieces.
In a bowl , combine the beef with 1½ tablespoons soy sauce , 1 tablespoon oyster sauce , 2 tablespoons cornstarch , 1 teaspoon black pepper , 1 teaspoon baking soda , and 1 tablespoon neutral oil . Mix to coat evenly and marinate for 15 minutes .
Make the Sauce
In a small bowl , mix ½ cup chicken stock , ½ tablespoon soy sauce , 1 tablespoon dark soy sauce , 1 tablespoon sugar , and 1 tablespoon cornstarch . Set aside.
Stir-Fry
Heat a wok or large pan over medium-high heat. Add 2 tablespoons neutral oil and swirl to coat. Add the beef in a single layer and let it sit for 30 seconds so the sides can brown. Sauté for 2-3 minutes until browned on all sides. Transfer to a plate.
In the same pan, add 11 whole garlic cloves and sauté for 3-4 minutes until golden brown and fragrant.
Once the oil is infused with garlic, add 30 stalks asparagus . Sauté for 2-3 minutes until crisp-tender.
Combine
Add the beef back to the pan. Give the sauce a stir to recombine and pour it in.
Turn the heat to high and sauté for 1-2 minutes until the sauce thickens and coats everything evenly.
Serve immediately over steamed rice.
