  • 1 tsp Dijon mustard

  • 0.50 tsp fine sea salt

Combine 5 oz spring greens mix (or whatever greens you have on hand), 1 large English cucumber , very thinly sliced, 0.50 medium red onion , peeled and very thinly sliced, 0.50 cup pepitas or toasted pine nuts (or whatever nuts you have on hand), 3 tbsp olive oil , 1 tbsp lemon juice , freshly squeezed (or red wine vinegar), 1 tsp Dijon mustard , 1 small clove garlic , pressed or finely minced (or 0.5 tsp garlic powder), 0.50 tsp fine sea salt in a bowl and stir until evenly mixed.
