Ingredients

  • 2 large eggs
  • 1 cup cherry tomatoes
  • 2 cups mixed fruit
  • 3 slices whole grain bread
  • 1 large avocado
  • to taste salt
  • to taste pepper
  • 1 tbsp olive oil

Place 2 large eggs in a pot of water, bring to a boil, then simmer 10 minutes for hard-boiled. Cool, peel, and slice.

Halve 1 cup cherry tomatoes .

Dice 2 cups mixed fruit (apple, banana, berries) into a bowl.

Toast 3 slices whole grain bread to your preferred level of crispiness in a toaster .

Assemble

Mash 1 large avocado in a bowl and season with to taste salt and to taste pepper .

Spread the mashed avocado evenly on each slice of toast.

Top with the halved cherry tomatoes and sliced boiled eggs.

Drizzle 1 tbsp olive oil over the toast.
