Instructions
Marinate the Chicken
In a bowl , combine 4 boneless chicken thighs , 2 tablespoons soy sauce , 1 tablespoon vegetarian oyster sauce , 1 teaspoon garlic powder , ½ teaspoon salt , ½ teaspoon black pepper , and 2 tablespoons cornstarch . Mix until the chicken is evenly coated.
Make the Lemon Glaze
In a small bowl , mix 1-2 tablespoons lemon zest , ¼ cup fresh lemon juice , 2 tablespoons honey , ¼ teaspoon salt , and 1 teaspoon cornstarch . Set aside.
Pan-Fry
Heat 1 tablespoon neutral oil in a non-stick pan over medium-high heat. Pan-fry the chicken for 5 minutes per side until golden and cooked through. Remove and set aside.
Glaze
Pour the lemon sauce into the pan and simmer for 30 seconds until glossy.
Add the chicken back in and cook over medium-high heat for 2-3 minutes , tossing to coat evenly.
Serve
Serve the chicken thighs whole or cut into bite-sized slices over steamed rice . Garnish with cilantro and lemon slices .
