  • 24 to 30 oz freshly ground beef chuck
  • kosher salt and freshly ground black pepper
  • 1 tbsp vegetable oil
  • 4 slices cheese slices

Burgers cooked sous-vide are extremely juicy and evenly cooked.

Instructions

Preheat sous vide immersion circulator to desired temperature (130 °F for medium).

Divide 24 to 30 oz freshly ground beef chuck into 4 portions (6 oz each) and form into patties. Season generously with kosher salt and freshly ground black pepper .

Place patties in vacuum bags and seal. Cook for 40 minutes to 2.5 hours .

Remove from bags and pat dry. Heat 1 tbsp vegetable oil in a skillet over high heat. Sear burgers for 30 seconds per side. Add 4 slices cheese slices if desired and cover to melt.

Serve on buns with desired toppings.
